This Thermomix vegetable Fritters is an easy meal, good snack, or to add to kids lunchbox!
If you have some vegetables in your fridge, or even leftover veggies and want an easy recipe, making vegetable fritters is always a good choice.
They are packed with full of vegetables but having almost like hash brown consistency, kids will love them.
You can have these fritters hot or cold and they can be frozen once cooked.
Ingredients : serves 4
• 200g (2 cups) broccoli florets
• 240g (2 cups) green beans, trimmed
•100g (1) red onion
• 5g (2) garlic cloves
• 200g (4) free-range eggs
• 160g (2/3 cup) reduced-fat milk
• 80g (2/3 cup) plain wholemeal flour
• 1 tsp ground turmeric
• 1 tsp ground cumin
• salt
• pepper
• 20g (1 tbsp) extra virgin olive oil
• 200g (2) tomatoes, chopped
• 200g (1) Lebanese cucumber, chopped
•120g (4 cups) mixed lettuce
• 20g (1 tbsp) lemon juice
Method to make 6 Thermomix Vegetable Fritters :
1. Chop broccoli, green beans, onion and garlic in the Thermomix bowl for 3-4 seconds on speed 4, repeating until finely diced.
2. Add eggs, milk, flour and spices, and mix for 30 seconds on speed 4 until batter coats vegetables well and there are no lumps of flour. Season with salt and pepper.
3. Heat the oil in a non-stick frying pan over a medium-high heat. Cook fritters in batches
– mixture will make approximately 16 fritters.Scoop batter into hot oil and cook for 3-4 minutes on each side until golden.
4. While fritters are cooking, combine tomato, cucumber, lettuce leaves and lemon juice. Season with salt and pepper to taste.
5. Serve fritters with the salad on the side.
