Ingredients:

  • 1 large cucumber, diced
  • 2 large tomatoes, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper (red, yellow, or orange), diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the diced cucumber, tomatoes, red onion, bell pepper, Kalamata olives, crumbled feta cheese, parsley, and mint leaves.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad ingredients in the large bowl.
  4. Gently toss the salad until all ingredients are evenly coated with the dressing.
